Mushroom Pizza

Mushrooms are the best pizza topping. Fight me. 😆 What makes this particular mushroom pizza so good is browning the mushrooms before putting them on the pizza. It cooks off the water thereby maximizing flavor and preventing sogginess. Cooking it on a pizza stone crisps the pizza nicely, but isn’t a requirement. It cooks off the water thereby maximizing flavor and preventing sogginess. Cooking it on a pizza stone crisps the pizza nicely, but isn’t a requirement. Gently stretch pizza dough into two 12 to 13 inch circles. Cover them and allow dough to rest for about 30 minutes at room temperature.

Sauté mushrooms in two batches:
In a large frying pan, melt 1/2 Tablespoon olive oil and 1 Tablespoon butter over medium-low heat. Sauté half of the sliced mushrooms until they are lightly browned and all of the excess liquid has boiled away.
Repeat with the second batch.

Add thyme, oregano, and garlic, and sauté for 1 to 2 minutes more.

Preheat the oven to 450°F. If using a pizza stone, allow it to preheat for at least 10 minutes at this temperature.
Brush top of each dough circle lightly with a little olive oil. - 5
Spread pizza sauce on top of dough. Use more or less than 1/2 cup for each pizza depending on how saucy you like it. Don’t overdo it, though, or else your pizza will be soggy.

Top with mushrooms

Sprinkle each pizza with about 1 cup cheese. In addition to mozzarella, you can also add some shredded Parmesan or Asiago cheese.

I baked my pizzas for 12 to 13 minutes on a pizza stone in an oven preheated to 450°F.
If you don’t have a pizza stone, use a regular pizza pan or baking pan. Place another pan (like a cookie sheet) upside down in the oven while it is preheating and place your pan containing the pizza on top of the preheated pan. This will help the bottom of the crust to brown better.
