Scampi Tartare with Broccoli Pistachio Pesto and Caviar
Based on a recipe by chef Thase Bacelar. I served it as the first appetizer for New Year's Eve dinner and it turned out amazing.

Clean the raw scampi and cut the flesh in half to remove the vein. Chop into small pieces, being careful not to mash them. Marinate for a few minutes with a drizzle of extra-virgin olive oil, 1 tablespoon lemon juice, salt, and pepper.

While the scampi are marinating, boil the broccoli for 4 minutes in salted water. Drain and place in ice water to keep the color bright. Reserve a little of the cooking water.

Blend the broccoli with the pistachios, extra-virgin olive oil, and a pinch of salt. Add the reserved cooking water a little at a time until you reach a creamy consistency. It should not be too runny.

Using a round ring mold, assemble the dish with the tartare on the bottom and the pesto on top. Garnish with caviar, a few whole pistachios, and a drizzle of olive oil.
