I ate an avocodo vegetable sandwich at Subway and wondered if I could use the avocados I have at home to make something similar. I ended up making a teriyaki vegetable sandwich with aburaage.

This sandwich is even healthier if you use bread that doesn't contain preservatives. The bread in the photo is a homemade sesame bread made with natural yeast and whole-wheat flour You can either toast the bread or leave it as it is.
Feel free to modify the teriyaki sauce recipe to suit your tastes. I prefer sauce with a kick, so I held back on the sugar. Recipe by suziehippy

Ingredients

1 serving
  1. 2 sliceBread (sliced to your preferred thickness) I used an 8 slice loaf
  2. 3leaves Lettuce
  3. 1/2Avocado
  4. 1Aburaage
  5. 1Soy mayonnaise (or mayonnaise)
  6. 1 tsp●Soy sauce
  7. 1 tsp●Mirin
  8. 1 tsp●water
  9. 1/2 tsp●Beet sugar

Cooking Instructions

    Thoroughly drain the aburaage. Add the ● ingredients into a pan and bring to a boil. Add the aburaage and keep coating with the sauce until all the liquid has boiled away.

    Slice the avocado. Slice the aburaage into any size you like.

    Spread the bread with soy mayonnaise, then add lettuce -> aburaage -> avocado -> soy mayonnaise. Repeat once more, top with lettuce and finish off by sandwiching with another layer of bread.

    Sometimes the sandwich may drip a bit so I recommend wrapping it in parchment paper Cut a sheet of parchment paper into a square.

    Fold into a triangle, and then fold again into another triangle to create a pocket. The pocket may not hold together very well, so staple to secure.
