Okara Sweet Corn Cake

I make soy milk at home so I always have lots of okara left. I wanted to find a way to put this okara to good use. This is a really simple recipe. All you do is mix everything together and put it in the rice cooker. This is a standard breakfast dish in our house.

Melt the butter.

Using the inner bowl of a rice cooker, mix the butter together with all the other ingredients.

Place the inner bowl back into the rice cooker and switch on the machine. If it is still somewhat raw after a regular cooking cycle, let it cook for another round.

It has a nice, fluffy finish.

It's also delicious to substitute the corn with cocoa powder.
