Nachos with Pork Rinds Covered in Yellow Cheese

A friend went to Monterrey and brought me a local luxury from the North: Chicharrón from La Ramos. If you haven't tried it, it's time to consider a trip to the northern city and enjoy its cuisine and beautiful city with all its advantages, or take advantage of your friend and ask them to bring you a portfolio from San Juan and at least a kilo of Chicharrón from La Ramos. Chop the tomatoes and onion and set aside.

Gather everything you need. You can serve the nachos individually or for the whole family. With current safety measures, I serve them individually.

Mix the nacho cheese with a little mayonnaise gradually, and add the vinegar little by little according to how spicy your household likes it, and a bit of water. Mix well and add a little salt. Heat this cheese in the microwave for about 30-40 seconds to pour over the nachos.

The La Ramos pork rinds come in whole pieces. You can break them up a bit and then put them in the food processor and in small amounts in the blender.

Place the nachos at the bottom, trying to arrange them standing on one side. Add the La Ramos pork rinds, tomatoes, and onion, and cover them with the hot cheese. You can add sliced or chopped jalapeños to taste.
