(Not frozen) Whole Roast Chicken

Packaging does say COOKING TIME 1hr 25mins. Did not have Kitchen Foil , so roasted the whole chicken at Gas Mark 5 throughout the cooking time . The carrots were already cut and Packaged at 300g did boil them in boiling water for 3 minutes . I used 700g of peeled Maris Piper Potatoes. The chicken meat was all tender.

Preheat oven to Gas Mark 5.
Wash raw whole chicken in cold water within a large mixing bowl - rinsing the water out several times. Place Vegetable Oil in a Roasting Tin - not too much and not too little - coat the whole chicken in Vegetable Oil and then season the inside of the chicken with Coarse Sea Salt and add Ground Black Pepper and Sea Salt over the top of the chicken skin on top of the whole chicken. - 2
Place raw whole chicken over peeled uncooked potatoes and carrots and then roast in the oven for One hour with Kitchen Foil over the top.

Then roast for a further 25 or 30 minutes without the Kitchen Foil over the top of the whole chicken and then turn the roasted Vegetables over and maybe release chicken juice from inside the chicken and then baste and can add more seasoning.

Rest the cooked chicken for 30 minutes preferably with Kitchen Foil over the top and then serve some of the roasted chicken with the roasted Vegetables. Can use shop bought Salad Cream or Mayonnaise as a sauce to go with the roast dinner.
