Beef Soup with Rice and Vegetables

First, wash all the ingredients. Cut the beef into large pieces (preferably with some bone for better flavor). In a large pot, add 4 quarts of water (about 4 liters) and bring to a boil.

Once boiling, add the beef and a few herb sprigs. After 1 hour and 30 minutes, remove the herbs and add the potatoes, mixed vegetables, and rice to the broth. Stir well and adjust the salt to taste.

After 20 minutes, turn off the heat. Let the soup rest for 10 minutes, then serve. You can serve it with a tasty salsa criolla on the side.
