Tarta de Santiago is a traditional dessert from Galicia, but many people can't enjoy it because of the sugar. I decided to adapt it to a version with sweetener.

Tarta de Santiago is a traditional dessert from Galicia, but many people can't enjoy it because of the sugar. I decided to adapt it to a version with sweetener.

Mix the eggs with the sweetener and beat with an electric mixer for 2 minutes until the mixture lightens in color.

Add the almond flour mixed with the lemon zest.

Stir the mixture well and pour it into a baking pan. Bake for 30 minutes at 350°F (180°C). Sprinkle sliced almonds on top.

Grind 3 tablespoons of sweetener in a coffee grinder until it has a powdered sugar consistency (but it's not sugar).

Once the cake is done, let it cool. Find a template of the Cross of Santiago online, draw and cut it out. Place it on top of the cake and dust the entire surface with the powdered sweetener. Carefully remove the template, and it's ready.
