South Indian Rava Upma

Heat 1 tablespoon of ghee in a pan. Add the cashewnuts and peanuts.

Roast it slightly till light golden in color. Then add the golden raisins and roast for few seconds. Remove it in a plate and set it aside.

In the same pan, add another tablespoon of ghee. Add the rava and roast it over medium heat with constant stirring until fragrant ie. about 5-6 minutes.

Set it aside. Assemble all the required ingredients.

Heat 1 tablespoon of ghee in a kadai. Add mustard seeds and allow it to crackle. Add cumin seeds, chana dal and urad dal and roast it till slightly golden.

Next add the chopped green chillies, sliced ginger and curry leaves and saute for a minute. Then add the finely chopped onions and saute on medium flame for 2 minutes until the onions are soft. Add the green peas and cook for 2-3 minutes.

Add the chopped carrot and green bell pepper and salt and saute for 2 minutes on medium flame.

Add water and let it come to a boil. Add the roasted rava, little at a time, stirring continuously.

Cover the pan with a lid and cook on low flame for 2 minutes.

Remove the lid and add the lemon juice and the roasted nuts and raisins and mix it well. Garnish it with the chopped coriander leaves. Close the pan with the lid and let it rest for 4-5 minutes before serving.
