I came up with this recipe during the pandemic when we were low on food and I was throwing things together alot.🤷🏻‍♀️ It worked perfectly! 😏👌 I'm not a big fan of chicken personally but my family is and anything that gets them eating rice and vegetables is ok with me! 😎👍

Ingredients

4-6 servings
  1. 2 (29 oz)cans of "veg-all" (or 4 15oz cans of mixed vegetables)
  2. 1 (8 oz)bag of "Ben's Ready Rice" (any flavor you prefer)
  3. 4boneless skinless chicken breasts
  4. 10-14 ozcan or box of chicken broth
  5. 2 tspsalt
  6. 2 tsppepper
  7. 2 tspgarlic powder
  8. 1 tbspdried minced onion flakes
  9. 4 tbsphoney mustard
  10. 4 tbspgrated parmesan cheese

Cooking Instructions

    First, preheat oven to 425° & place chicken breasts into casserole baking dish. Prepare rice according to bag.

    Then pour rice evenly around chicken breasts. Drain vegetables & pour them all around the chicken breasts as well. Season chicken with salt, pepper, garlic, & dried onion.

    Next, pour chicken broth evenly over entire pan contents & cover top of chicken breasts with honey mustard.

  4. 4

    Lastly, top chicken with grated parmesan cheese, cover pan with foil, & place into oven for 45 minutes or until chicken is done all the way through.

    Serve & Enjoy!
