Drunken Stir-Fried Instant Noodles (Pad Kee Mao Mama)

Boil the instant noodles (do not overcook; just until slightly firm). Drain and set aside.

Heat oil in a pan. Once hot, add the minced garlic, then the crushed chili peppers, and stir-fry until fragrant.

Add your choice of meat and stir-fry until cooked through.

Add oyster sauce to the pan, followed by the chili paste packet from the instant noodles.

Add a little water to the pan.

Add the cooked noodles to the pan and stir-fry to combine. Then add the seasoning powder from the instant noodle packet.

Mix everything well, then add the fresh basil leaves and toss to combine.
