To make the filling: Combine the ground pork with salt, sugar, five-spice powder, soy sauce, rice wine, and white pepper. Mix well. Add the chopped green onions, coarsely ground black pepper, and sesame oil, and mix again. Cover and refrigerate until ready to use.

To make the dough: In a large bowl, mix the all-purpose flour, yeast, salt, sugar, and water. Knead until a smooth dough forms. Cover with plastic wrap and let rest for 30 minutes.

To make the shortening dough: Mix the cake flour with lard until well combined, pressing the mixture together to form a dough. Set aside.

Take 2 ounces (60 grams) of the main dough and 1/2 ounce (15 grams) of the shortening dough. Roll the main dough into a ball and flatten it, then wrap the shortening dough inside. Flatten and roll up, then let rest for 10 minutes.

Roll out the rested dough, wrap it around the pork and green onion filling, and seal tightly. Brush the surface with egg wash and dip in white sesame seeds. Line a baking sheet with parchment paper and place the buns on it. Bake in a preheated oven at 400°F (200°C) for about 20 minutes, using both top and bottom heat.
