Aloo tamatar ki sabzi
Steps

First wash potatoes properly and drain t. Keep aside.
2. Add water in a pressure cooker then add potatoes cover the lid and wait for 3 whistles. Once it is done. Switch off the flame and keep aside the cooker. - 2
Cool it and open the lid. Keep the potatoes in a cold water. Peel it and transfer to a bowl.

For marination : Apply haldi powder and salt on potatoes.Mix..well and keep aside....

Heat mustard oil in a kadai. Add all the dry ingredients...fry for few seconds. Then add potatoes and fry for few minutes....in slow flame...

Then add the tomato puree, green chilli ginger paste, red chilli, cumin powder, dhaia powder, garam masala and salt....Mix... welll till the masala coated with potatoes.Once it is done..

Add enough water. Cover and cook till it is gravy..or the potatoes cook well...If you want juicy you can can add water as you like. Then taste it...Once it is done.

Transfer to a lovely glass bowl..Garnish with chopped coriaander leaves and ready to serve with luchi or pooris.....................
