Slice the rolls open and toast them to your liking. Grate the tomato onto the bread and drizzle with extra virgin olive oil.

Top with the white anchovies and smoked sardines. I think it should be one anchovy and one sardine per toast—maybe that's why it's called 'matrimonio'—but I had extra bread and we love white anchovies in vinegar.
