Malpua with rabri is a festive delicacy flavoured with cardamom, fennel and jaggery, influenced with mawa and ghee these sweet pancakes are like delicious bites of heaven. Served with an exotic saffron-sugar syrup and thick clotted cream(rabri), these malpuas are soft and melting in the centre with crisp laced edges. Making these malpuas is a family tradition at my place and we prepared it in various festivals, as in India any festival cannot be completed without delicious food.

Steps

Firstly for sugar syrup, in a pan add sugar, water, saffron and cardamom. Cook it in low-medium flame for 10-15 minutes or until it turn sticky.
Keep it aside. - 2
In a grinding jar add Maida, wheat flour, suji, mawa, ghee, sugar, milk, cardamom, and fennel seeds, grind till smooth.
We need pouring consistency batter. Add more milk if required.
Keep the batter aside for 20-30 minutes. - 3
In a flat base pan heat ghee for frying. Keep the flame on low-medium. Pour a ladle full of batter in the center. Do not spread the batter. It spread on its own, if the batter is of right consistency.
When the edges turn golden flip and fry both sides turned golden. - 4
When malpua is done, remove it from ghee and add to the luck warm sugar syrup directly.
Keep it in syrup for 30 seconds.
Remove it from syrup. Similarly make all malpuas. - 5
Garnish it with some Rabdi, chopped pistachios, rose petals and saffron strands.
Serve hot or cold.
