Cooking Instructions

Clean the zucchinis and remove the ends. Cut them lengthwise and spray the flesh with a little oil. Cook them 2 at a time for 10 minutes at 375°F in the air fryer. By this time, they should be tender; remove the flesh and set aside.

Combine the chicken with the cream cheese and spices. Add 2 tablespoons of Parmesan cheese and the chopped zucchini flesh, mixing well until you achieve a consistent mixture. Fill the boats and cut the cherry tomatoes in half, placing some on top of the mixture and sprinkling with oregano and the remaining cheese.

Place the zucchini boats in the air fryer for about 7 minutes at 400°F until they are golden brown. Serve hot.
