Ingredients

45 minutes
4 servings
  1. 1 cupbrown rice
  2. 1and 3/4 cups boiling water
  3. 1/4 tsp.salt
  4. 1 tbsp.olive oil or vegetable oil
  5. 1/4 cupdiced onion
  6. 1 clovegarlic, chopped
  7. 1 cupdiced tomatoes
  8. 1grated carrot
  9. 1/4 cupchopped cilantro. (Fresh coriander)

Cooking Instructions

45 minutes
  1. 1

    In a small saucepan put the brown rice, boiling water and salt. Bring to a boil, lower the heat, cover the pot and cook slowly for 33 minutes or until the rice is soft.

    In a frying pan heat the oil and sauté the garlic with the onion together.

  3. 3

    Add and sauté the carrot with the tomatoes.

  4. 4

    Add the cooked rice, half the cilantro and stir.

  5. 5

    Serve immediately and garnish with cilantro.
