Prawn/Chicken Ghee Roast (legit)

Heat 2 tbsp ghee. Save one for later.

Add the paste + curry leaves and fry till ghee fully separates and paste turns deep red.

Add meat + salt to taste and cook uncovered so masala gets coarse and thick like a chutney. Stir often or masala will stick.

Cook till meat is done and finish off with the remaining tbsp of ghee.
