Ingredients

  • As Required Soak in hot water and paste
  • 20-25Dry red chillies deseeded
  • 4-5cashew
  • 1 knobtamarind
  • 2 tbspginger garlic paste
  • As RequiredRoast before pasting:
  • 2-3 tbspblack peppercorns
  • 1-2 tbspkhus khus
  • 1 tbspmustard seeds
  • 1 tbspmethi seeds
  • 1 tbspjeera
  • Other Ingredients
  • 3 tbspQuality ghee
  • handfulCurry leaves
  • 1 knobjaggery
  • As Per TasteSalt
  • For Marinate
  • As RequiredPrawn or chicken
  • 1 tspturmeric
  • As per taste Salt

Steps

  1. 1

    Heat 2 tbsp ghee. Save one for later.

  2. 2

    Add the paste + curry leaves and fry till ghee fully separates and paste turns deep red.

  3. 3

    Add meat + salt to taste and cook uncovered so masala gets coarse and thick like a chutney. Stir often or masala will stick.

  4. 4

    Cook till meat is done and finish off with the remaining tbsp of ghee.
