First, soak the sweet potato gratings in water for 10 minutes as soon as you grate to remove the darkening and get a nice pink grated mix.

Heat ghee. Add cumin, ginger and chilli paste and saute well. Add the peanut powder, chilli powder and stir well.

Then squeeze water from the grated sweet potatoes and add them to the ghee.

Stir and cook for 5 minutes till translucent. Then add 1 cup hot water, salt, and sugar and close the lid. Cook till the raw flavour goes and water is absorbed. Around 10 minutes on slow flame. Do not allow to burn off the base due to less water. Keep checking and add more.

Add lemon juice, extra salt or chilli powder if needed. Then switch off the heat and serve hot with curd and lemon pickle. Delicious 😋😋
