Steps

In a bowl, take rice, wash it thoroughly but gently till the water stops turning white. Drain all the water.
Now add 2 cups of water at room temp. Keep it aside to soak for 20-30 mins. - 2
Wash and ready all the vegetables.

In a pressure cooker, add 2-3 table spoon oil and let it heat. When the oil is warm, add cumin seeds and all the other spices.

When spices are aromatic, add sliced onion along with a pinch of salt. Salt helps to cook the onion faster. Sauté until onions are soft and translucent

Add all the masalas to the onion and sauté for 30 secs.

Now add all the other vegetables and sauté for 2 mins.

Take the bowl in which rice was soaking and pour all the water from the bowl into the pressure cooker. Stir it well. At this point taste the water for salt and any additional masalas you need. Let the boil.

Once the water starts to boil, put all the rice in. Gently stir and mix all the ingredients.

Close the pressure cooker and let it be on high flame. Wait for the whistle.
After the 1st whistle simmer the flame and let it cook for 2-3 mins more.
Turn off the flames and let the cooker rest till all the pressure releases on it’s own. - 10
Open the lid. Gently mix, turning rice from the sides to centre.
Serve on plate. Add a dab of ghee and enjoy with some onion/boondi raita.
