Put pork belly in the oven under 250'c for about 20 mins.

In a pot, add sweet potatoes and boil for about 10 mins until soft.

Blend the sweet potatoes into puree. Set aside.

Deep fry the shallots and set aside.

Marinate the pork belly and set aside for at least 2 hours.

Serve the pork belly with puree on the bottom, red radish, spring onions, shallots on top. Season with dash of soya sauce.
