Wash, peel, and chop apples into small cubes. Pour refined or mustard oil into a pan. Sprinkle fennel, cumin seeds, dry red chili, and cinnamon. When they sizzle, add grated ginger and saute few minutes. Add chopped apples, salt to taste, sugar, a pinch of cinnamon powder, Kashmiri red chili powder, and vinegar. Stir and cook covered on low heat untill the apples are tender.

Add deseeded chopped dates, a few cashewnuts, and raisins. Add a cup of water and cook further till sugar melts and gains one-string consistency. Sprinkle 1/4th tsp fennel powder and juice of a lemon. Mash a few apples with a spatula to give a thicker texture to the Apple Chutney.

Turn off the heat when the chutney is thick. Cool and store in a clean dry glass jar. Refrigerate and enjoy delicious and flavourful Apple Chutney up to 1 or 2 months as a side to your meals or top it on toasts, crackers, roti, paratha, or any Indian flatbread.
