Heat oil and shallow fry cottage cheese till golden brown, remove them on kitchen napkin, keep aside. Wash spinach 🥬, pat dry them with kitchen towel, cut finely, in a blender add cut spinach 🥬, green chillies paste, chopped coriander leaves 🌿, water and grind it well, do not add to much water, remove and keep aside.

Heat oil, ghee and mix, add bay leaf 🍂, cloves, whole red chillies, cinnamon stick, cumin seeds, cook for 1 sec and add finely chopped onions 🧅, cook until golden, add ginger-garlic paste 🧄 and mix well, add spinach puree and mix well, cook on medium flame, till oil comes out.

Add turmeric powder, kashmiri red chillies powder 🌶️, coriander & cumin powder, dry fenugreek leaves and mix well, add finely chopped tomato 🍅, salt 🧂 and mix well, cover and cook on low- medium flame. Cover and cook

Add plain yogurt mix, cook till oil is separate, add little 1/2 cup water and mix well, let it boil, add fried cottage cheese, garam masala powder and mix gently, cook for 4 mins, Remove in serving dish and keep aside.

For tempering: in a small saucepan, heat ghee/ oil, add cumin seeds when start to crackle, add finely chopped garlic 🧄 cook till golden and finally add kashmiri red chillies powder 🌶️ mix, remove from flame, pour the tempering on top and serve hot.

Garnish with finely chopped coriander leaves 🌿, cream. Serve with paratha, butter naan, cumin rice or plain rice.
