In a bowl, add sugar and lemon zest, mix together to infuse lemon oil from the zest. Add butter, veg oil and whisk. Mix until light and fluffy or pale yellow. Then add eggs, one at a time and mix after every addition. Add lemon juice and mix.

Add flavors, half of your sifted flour, a tsp baking powder and 1/2 tsp salt. Mix until no traces of flour.

Add 1/2 cup milk, mix until smooth (don't over mix). Add the remaining flour, salt and baking powder,mix. Then add half cup milk and mix.

Grease your muffin tray and pour in the batter. Bake in a preheated oven for 40-45mins or until a toothpick inserted into the center comes out clean.

When it's done, let it cool and enjoy.
