This bacon wrapped meatloaf is hearty and delicious. It serves at least 6 people and is perfect with pasta or potatoes and a side of fresh vegetables.

Preheat the oven to 350°

Add the bread to a large bowl and put the milk on top of the slices. Let them soak for five minutes.

Add the remaining ingredients and use your hands to combine. Try to ensure that the bread is sufficiently combined into the mixture, though don’t overmix.

Form the meat into a loaf (about 5” wide), and place it over a broiler pan to allow the fat to drain. (Lining the bottom of the pan with foil makes it easier to clean)

Line the bacon on the top of the loaf and carefully tick the ends under the bottom. If you have thicker cuts of bacon, use a roller to flatten out the pieces.

Combine the sauce ingredients and brush 1/3 off it over the meatloaf.

Bake the meatloaf for 45 minutes on the middle rack. Remove it from the oven and brush another 1/3 off the sauce over it. Bake for another 25 minutes.

Remove from the oven once internal temp has reached at least 160°. Let meatloaf sit for ten minutes prior to serving. Use remaining sauce to taste.
