  1. Aubergines
  2. Salt
  3. Vegetable or sunflower oil
  4. Eaten with
  5. Traditional “Tarator” tahini sauce (attached in the steps)
  6. Flatbread/pita/ arabic bread

Steps

  1. 1

    Roughly peel and slice the aubergines into slices 1cm thick. Sprinkle some salt

    Add oil of (around 2cm depth) in a wok or deep pan/pot. Heat it up

  3. 3

    Add as many slices of aubergines as you can, but don’t overcrowd the pot/wok. Fry for a few minutes on each side until nice and gold.

    Place the aubergine on a kitchen towel to absorb the excess oil. Enjoy with flatbread and tahini sauce. https://cookpad.wasmer.app/uk/r/16315643
