Winter starts with green leafy veggies. Here I am sharing gujarati style baingan bharta, which is well known as Ringana No Olo in gujarati language. Enjoy with Bajra Roti, Jaggery, spring onions, and garlic chutney.
Steps

Take big brinjals, apply oil on it, roast it on direct medium flame of gas. When turns burnt. Put it in water for just 1 minute. Remove burnt skin and mash it.

Roast onion, garlic cloves, tomatoes and green chilli on flame to enhance burnt flavour in bharta. Let it cool completely. Peel off onions and tomatoes.
Now chopped tomatoes, onions, garlic, green chillies and ginger. - 3
Take a kadai, add oil, heat it, add hing and saute chopped onions and garlic for 1 minute. Now add chopped tomatoes with green chillies and ginger. Saute till oil releases on the side of kadai. Add all masala, mix well. Add green onions, mix well. Now add mashed baingan, cook for 1 minute. Lastly add lemon juice and Sprinkle some chopped coriander.

Take Bajra flour, add salt, add water to knead Bajra flour. Make it smooth. Heat a tawa. Take a portion of dough, sprinkle Bajra flour on rolling board. With the help of palm make roti, by patting in circle, Sprinkle flour dusting to make roti round and in perfect size. Put on tawa, roast both sides and even on direct flame of gas. Apply ghee on hot roti.

Ready to serve winter special baingan bharta with bajara roti, garlic chutney, spring onions and jaggery.. Enjoy.
