My almighty egusi soup

Pour the egusi powder in a medium bowl, add some chopped onions,the egg and some water. combine to make a paste then set aside

In a medium pot heat the palm oil. add the remaining onion and fry until translucent.

Add the egusi paste bit by bit.reduce the heat to low and cover to cook. Do not stir immediately, after a minute or so open and stir to fry the mixture this will make the egusi to form lumps and look really nice.

Cover to cook. Add the stock, cooked meat and stock fish, seasoning and spices, stir and cover for at least 30 mins.

Cover and cook again until the egusi is fully cooked. add the blended pepper mix and stir.

You can serve with pounded yam, plantain swallow or even eba.

Finally add the ugu leaves and cook on low heat until it's done.
