In winter we get the best spinach, I feel like adding it to as many dishes as possible. Today I have made tasty delicious Palak khichdi. It's very simple, quick and easy recipe.
It's also a comforting recipe of rice and grains mixed with spinach and tempered with a fragrant and delicious garlic tempering.

In winter we get the best spinach, I feel like adding it to as many dishes as possible. Today I have made tasty delicious Palak khichdi. It's very simple, quick and easy recipe.
It's also a comforting recipe of rice and grains mixed with spinach and tempered with a fragrant and delicious garlic tempering.

In a pressure cooker add soaked rice, moong dal, salt as per taste and 1.5 cup water, fix the lid and cook upto 2 whistles on medium heat.

Add a bunch of palak in a hot water, remove in 5 seconds and transfer into a bowl of ice cold water to cool down. Take blanched palak in a mixer jar add green chillies and lemon juice and grind to make a thick paste.

Heat oil and ghee add cumin seeds, hing and chopped garlic and saute few seconds then add chopped onion and cook, add carrots and beans cover lid and cook the vegetables.

Now add palak puree, mix it well, add turmeric powder, coriander powder mix again and cook 2-3 minutes then add cooked dal chawal and mix everything well.

Add little water and cook fo 4-5 minutes on medium heat. Palak khichdi is ready.

Further for tempering heat ghee in a small tadka pan add chopped garlic and a dry red chilli when garlic turn golden brown then turn off the flame. Serve warm khichdi in a bowl and add tadka on it.
