Madeleines
A colleague introduced me to cooking these delicious cakes. Baking often involves lots of steps but this is a simple recipe that works every time . You will need 2 eggs to make about 14-16 Madeleines and a madeleine baking tray.

A colleague introduced me to cooking these delicious cakes. Baking often involves lots of steps but this is a simple recipe that works every time . You will need 2 eggs to make about 14-16 Madeleines and a madeleine baking tray.

Butter the baking tray and heat oven to 190 degrees centigrade. (I often cook these when the oven is on for cooking dinner)

Add eggs, honey and sugar to a large bowl and whisk until pale and fluffy (about 3 minutes with an electric whisk)

Add the flour and pinch of salt and fold into the egg and sugar mix.

Fold in the melted butter

Spoon into buttered Madeleine baking tray. Bake for 8-10 minutes until light brown. You may need to cook in two batches.

Best eaten the same day or store for up to 2 days.
