Ingredients

Prep 15 min, Cook 10 min
4 x 4-inches (10 cm) pancakes
  1. Dry ingredients
  2. 1 cup (120 g)Oat flour (Recipe # 16664357)
  3. 1/3 cup (40 g)Unbleached All-purpose flour
  4. 1/4 tspBaking soda
  5. 1/4 tspGround cinnamon
  6. Wet ingredients
  7. 1Large egg -Room temperature
  8. 2/3 cup (160 ml)Milk or Milk alternatives of your choice (Whey after your cottage cheese making)
  9. 1 tsp(5m) Lemon juice or White vinegar
  10. 1 tsp (5 ml)Vegetable oil
  11. Topping  -Optional
  12. 1 tspUnsalted margarine
  13. 1 tbspMaple syrup
  14. This recipe is intended to be compatible with the diet of individuals with diabetes, kidney and heart disease, but please consult your doctor, renal nurse, nutritionist or other medical professionals!

Cooking Instructions

Prep 15 min, Cook 10 min

    In a medium mixing bowl, using whisk to sift the dry ingredients together. Set-aside.

    In a small mixing bowl, beat wet ingredients together.

  3. 3

    Add the wet ingredients into the dry ingredients from Step 1, and stir to combine.

  4. 4

    Let the batter rest for 10 minutes to fully hydrate the oat flour, which turns thicker.

  5. 5

    Heat an non-stick fry pan to Med-High temperature. Scoop the batter onto the pan and cook for 2-3 min until the bottom becomes golden brown.

    Flip the pancake. Continue cooking until brown on both sides. Make sure the cake is cooked right through and no raw parts remain in the middle.

  7. 7

    Repeat with remaining batter.

  8. 8

    2 pancakes for 1 serving. Serve with Unsalted margarine and Maple syrup on top, amount adjusted for your daily nutritional needs.
