Ingredients

  • 1large onion, thinly sliced
  • 2 tbspolive oil
  • 2large fennel bulbs (or celeriac, chopped)
  • 1 tspfennel seeds
  • 2garlic cloves, sliced
  • 1 tbspharissa (or red pesto)
  • 200 mlwhite wine
  • 1small can of tomato puree
  • 1 tinchickpeas, drained and rinsed
  • 500 mlfish stock
  • fish
  • prawn
  • calamari
  • other seafoods (mussels, clams, etc)
  • 1 pinchdried chili flakes
  • salt and pepper
  • parsley

Steps

  1. 1

    Heat the pot with 2 tbsp olive oil, add the onion and fennel seeds, fennel or celeriac. On medium heat, cover the lid and cook for about 10 mins.

    Add garlic and harissa(or pesto) and cook for a couple of mins. Then pour in wine bring to a simmer. Cook for a few mins or wine is reduced about half.

  3. 3

    Add tomato puree and simmer about 5 mins.

  4. 4

    In another small pot, cook the fish stock.

  5. 5

    Add the chickpeas and fish stock. Cook for another 10 mins.

  6. 6

    Add fish and prawns in and cook for about 5 mins.

  7. 7

    Add calamari in and cook for about 3 mins.

  8. 8

    Serve with pasley.

Living in Dublin with my Irish partner who is celiac. My recipes are Gluten Free (GF). Most of my recipes are Asian food and I use soya sauce a lot in them. Regular soya sauce is not GF, but you can get GF one from supermarkets.
