Sichuan Dan Dan Noodles 坦坦面

This recipe is based on the Traditional Dan Dan Noodles recipe by Fuschia Dunlop with a few adjustments to the topping amounts, which is the way I liked it in the end. For example, I like to use a little extra vinegar and less chili oil. This is still very spicy for me, but it might differ depending on the chili oil you use and of course your tolerance for spiciness. I also only use one type of soy sauce (I recommend a high quality one if you can find it).

This will make a very big portion for 2 people or a smaller portion for 4 people if you have other side dishes to eat. You can also make all of the pork topping and save it for another meal on a different day. Just cook the noodles fresh, adding all the toppings as needed.

Ingredients

40 minutes
2-4 people
  • Pork topping
  • 2 tspfresh ginger, minced
  • 150 gground pork
  • 1 TbspShaoxing wine
  • 1 1/2 tspsweet flour sauce (甜面酱 / tian mian jiang)
  • 2 tspsoy sauce
  • 1 pinchsalt
  • 1 Tbspcooking oil
  • Noodles and other toppings
  • 200 gChinese wheat noodles
  • 1 handfulbok choy or other Asian greens
  • 2 tspsesame paste
  • 2 Tbspyibin suimi yacai (宜宾碎米芽菜 / pickled mustard greens)
  • 4 tspchili oil or more to taste
  • 2 tspBaoning vinegar (保宁醋) or Chinkiang vinegar (镇江香醋)
  • 4-6 tspsoy sauce
  • 1/2 tspSichuan pepper, toasted and ground

Steps

    Lightly toast the Sichuan pepper and grind up with a spice grinder or mortar and pestle. Set aside.

    Heat a frying pan on medium high. Add cooking oil and stir fry the ginger.

    Add pork and stir fry until it changes color then add in the Shaoxing wine. Let the liquid mostly evaporate.

    Move the pork over to the side and add the sweet flour sauce to the pan.

    Stir in soy sauce, mix everything well. Remove meat from pan and set aside.

    Rinse the yacai in a fine strainer and squeeze out the water. Heat a little oil in a frying pan and briefly stir fry until fragrant. Remove from pan and set aside.

    Set out the serving dishes. Divide up the sesame paste between each dish. Divide up the yibin yacai on top of the sesame paste. Next add the soy sauce, vinegar, chili oil, and Sichuan pepper, dividing up between each dish.

    Bring a pot of water to a boil (it should be enough water to boil the noodles). Briefly blanch the greens for about a minute or until bright green. Remove from hot water and drain.

    Add the noodles to the boiling water and cook according to package directions. Be careful not to boil them too soft. Drain when finished cooking.

    Divide noodles up among the serving dishes on top of the other ingredients you already added. Arrange the greens on the side and top with the pork topping.

    Mix everything up well so the noodles are coated in all the toppings and pork. Enjoy!

    You can adjust the flavors here by adding more soy sauce, vinegar, and chili oil.
