First cut the suran (elephant yam) & a small potato (peeled) into small cubes and let them boil along with some salt and water for 2 whistles. Now remove them from the cooker and keep them aside. Now fry the prawns by adding some salt and turmeric and keep them aside too.

Heat a pan, add some oil in it. Then add all the khada masalas mentioned above like jeera, cinnamon sticks, green cardamom, black cardamom, dried red chilli, bay leaf & curry leaves. Let everything splutter a bit.

Then add chopped tomatoes and slit green chillies and cook until it turns little mushy, now add ginger-garlic paste and cook for one more minute.

Then add grated onion to it and mix it well. Now cook the masala on a low flame for 2 to 3 mins. Then add all the dry masalas like turmeric powder, cumin powder, coriander powder, red chilli powder, garam masala, salt and sugar and combine everything well with the masalas. Now let the masalas cook on a low flame until oil starts leaving from the masalas.

Once the masala gets fried, add the boiled vegetables (suran & potato cubes) in it and mix everything well. Then add all the fried shrimps in it and again give everything a good mix.

Now add 1 cup of hot water and give it a mix. Now check the salt and cover the pan and let it cook for about 12 mins on a low flame.

After sometime open the lid, add some chopped corriender and give it a final mix. Your winter-special veggie is now ready to serve. Serve it with hot rice.
