Ricotta Cheese Spinach Ravioli

I eventually went down to a grade 6 on my Kenwood Lasagne Roller Attachment - could have gone thinner, but is the first time I have ever made Ravioli's . The filling was not completely bland, I did add salt and a whole nut of grated Nutmeg - once the Ravioli's were cooked I did twist grind some Pink Rock Salt over the top

Make homemade Pasta. I used the dough hook on my Kenwood Food Mixer, but it does not matter if you don't have a free standing Food Mixer - just place 400g of Plain Flour on a clean spacious Kitchen side - make a moat in the middle and then crack hen eggs into it. What I did was put the Flour in my Kenwood Mixing Bowl and then added all the beaten eggs - added a few splashes of cold water and then used my Kenwood Dough Hook with the Kenwood guard on and then combined into a ball. Place a Spaghetti Pasta Cauldron Saucepan on the hob stove and boil cold tap water inside - when the water boils, place a large metal Mixing Bowl over that Cauldron and then place the contents of the 450g of raw Baby Spinach Leaves into that metal Mixing Bowl and then steam wilt for 4 minutes. Is good too cold water wash the raw Spinach first - drain all the water away and then steam wilt. Did learn about steam wilting the Spinach from the back of it's Packaging. Don't mix the Ricotta Cheese

Use a Lasagne Press Machine - a manual One that you move with your hands - move the dial around and around, or use Kenwood Attachments too electrically turn and press. So you need 2 separate thin sheets of raw Pasta - place blobs of the filling on One of the Pasta sheets and then place the other sheet of Pasta over the top. Cut into individual Ravioli's and seal edges tight

Boil cold water in a Saucepan and melt a large amount of Butter in a non-stick Wok. Boil Ravioli for several minutes, depending on the thickness of the Pasta and then place the cooked Ravioli's into the Wok and then shallow fry in the melted butter too crisp the boiled Pasta and then garnish with a generous amount of Basil Leaves. Can eat the Ravioli's dry if you want, their is a bit of moisture inside the Ravioli's
