Spinach Riccotta Pasta

This delicious and creamy pasta is prepared using spinach and a sauce made with ricotta cheese, fresh cream and milk. You do not need any kind of flour to make this sauce. This pasta is loved by my kids. It can be paired with garlic bread or bruschetta as a main course.

This delicious and creamy pasta is prepared using spinach and a sauce made with ricotta cheese, fresh cream and milk. You do not need any kind of flour to make this sauce. This pasta is loved by my kids. It can be paired with garlic bread or bruschetta as a main course.

Boil two ltr water in a pot. Add salt and little oil to it. Now add spaghetti pasta to it. Cook it until it is almost done. Do not overcook. Now take out some pasta water in case it is required later. Drain the pasta and refresh it with cold water. Drizzle some oil on top and mix well so that it does not stick.

Add ricotta cheese, milk and fresh cream to a mixer jar and blend it to make a smooth sauce.

Heat oil in a pan. Add onion and garlic to it. Saute it until light pink in colour. Now add spinach, salt, black pepper powder, chilli flakes and mixed herbs to it and mix everything well. Cook it on medium heat for 5 to 7 minutes. Now add ricotta sauce to it and mix it well.

Add grated cheese, lemon zest and lemon juice to it and mix. Cook it on medium heat for 2 to 3 minutes then add pasta to it and give it a good mix. Cook it on low heat for 5 - 7 minutes and turn off the heat.

Serve hot pasta along with garlic bread or bruschetta.
