Heat oil over medium heat in a heavy bottomed kadai/pan, once it is hot enough, Add chopped garlic and chopped green chillies.
Sauté for half a minute.
Next, add the cubed potatoes, cook medium-low heat until the potatoes are about 80% cooked. Add tomato and mix well - 2
Now add coriander and red chilli, turmeric, and salt.
Mix well.
Add the methi leaves, and mix it well.
Cover and cook for about 5 minutes.
Give it a good mix and stirring occasionally in between, about 8-10 minutes. - 3
Serve hot with chapati, rotala or as a side with rice and curry of your choice and some salad.
