A melt in mouth gorgeous looking basic Vanilla Sponge by me. Light, airy and full of subtle flavours. This recipe can easily be doubled or tripled depending upon the occasion. Iam sure you will love it. This Cake is made from scratch at home sweet home. Not only is it made easily, it's a great and a perfect base for many a mouthwatering Desserts.
Follow it and enjoy it with your loved ones. I didn't use Baking Soda or Buttermilk in this. Instead I have used only Milk. And for Cakes with Milk, Baking powder is a must. Mixing is an important part. Do not over mix and do it in one direction slowly and steadily and not harshly. You can use a hand held whisk or an electric blender. It will help in providing a proper aeration to the batter. Since this is a basic Sponge, I have kept it simple. Otherwise it can be topped with some luscious Whipped Cream or Buttercream Frosting or Icing. This base can be used in various other Cakes, Pastries, Bannoffee Pie, Trifle Puddings, Custard Trifle, Jar Cakes etc.

Steps

40-45 minutes
  1. 1

Preheat your oven to 180° at 40 minutes. By the time the batter is ready, it will get preheated for about a good ten minutes which is very much important. And then bake your cake for the rest of the time easily. Lightly butter and flour a 8"pan. Using a hand held mixer, beat butter or oil, sugar and vanilla essence.

  2. 2

Add eggs and egg white slowly until mixed well. Alternatively, sieve flour and baking powder.

  3. 3

Fold in the wet mix along with milk at each addition taking care not to overmix. In this wet mix, that is fluffy, creamy and frothy, fold in the dry ingredients slowly in parts. Do not add all at once. Do it slowly and steadily. Also remember to sieve all the dry ingredients once or twice. Using a spatula, follow the cut and fold method.

Pour this batter into the greased baking pan and bake for 35-40 minutes. Cool it on a wire rack for a few minutes before slicing it.

Homemaker by choice and a passionate cook by heart. An aspiring cook who actually never knew anything about Cooking until i became a mother myself. With Motherhood came the responsibilities as well and this was the turning point in my life.I started to learn the ABC's of cooking, taking help from my mother and my MIL. And time just flew. I spread my wings higher and higher. With my love for excellence and innovation, i stepped into a world of homecooks with my exposure to Cookpad one fine day on the social media. And there was no looking back since then and i have not only shared recipes here on this wonderful platform but also have made some lovely friends as well. Today iam successful because of my hard work, dedication and loads of good wishes of my family and my kids in particular.
