Baigan bharta is a delicious, smokey, spicy North Indian dish, traditionally made with roasted, mashed eggplant with onion Tomato masala. Here I made with easy way . Cook eggplant in pressure cooker and then prepare bharta with onion tomato masala and finally give dum of coal and ghee to make smokey taste.

Wash and cut baigan into 4 pieces. Put into a bowl and pressure cook until 2-3 whistles. Then remove skin and seeds as possible as and mash it.

In a pan heat ghee and oil. Add cumin seeds and ajwain. When sputters add asafoetida, curry leaves and garlic ginger paste. Saute for sometimes. Add chopped onion and tomato. Saute until oil separates.

Add turmeric powder, red chili powder, dhania jeera powder, garam masala powder and roasted cumin seeds powder. Add little water and mix well. Add mashed baigan, blanched green peas and stir well.

Add salt, whisked curd and required amount of water. Keep flame low. Cover with lid and simmer 4-5 minutes. Finally add chopped coriander leaves and spring onion leaves and mix it.

Now heat coal and put into a small katori. Put this katori on bharta. Apply 1 teaspoon ghee and immediately close with lid for 2-3 minutes. This gives nice smokey flavor. Enjoy delicious baigan bharta with makki roti or bajra roti.
