Ingredients

  1. 1 cupricotta
  2. 8 ozgoat cheese
  3. 1/2 cupfeta, crumbled + 1/4 cup for topping
  4. 1 tbsolive oil and half tbs for drizzling
  5. 2garlic cloves, minced
  6. 1.5 tspLemon juice
  7. 1/2 tspdried oregano
  8. 1 tspdried basil
  9. 1.5 cupscherry tomatoes (+ few extra for "presentation")
  10. 1/4 cupchopped fresh parsley (plus extra for garnishing)

Steps

  1. 1

    Preheat oven to 350⁰F and spray a baking dish with nonstick spray

  2. 2

    Mix together all the ingredients together (except the tomato) and mix well. Toss in the tomatoes and combine, taking care not to squish them.

  3. 3

    Pour the mixture into your baking dish.

  4. 4

    Push in the few extra tomatoes strategically for presentation, then top with the extra crumbled feta that you set aside. I also drizzle with a little extra olive oil at this point.

  5. 5

    Bake in oven for 25-30 min until bubbly warm (it won't really brown much, but if it's browning too much, turn the heat down)

  6. 6

    Remove from oven and top with fresh chopped parsley for garnishing

  7. 7

    Serve with buttered toasted baguette toasts, pretzels, and/or veggies
