Steps

Roast the Brinjals properly. Mashed potatoes. Grated ginger and garlic.

Heat oil and ghee in a pan. Add cumin seeds and red chillies. Allow cumin to splutter.

Then add chopped onion and saute till translucent. Add grated ginger and garlic and saute till rawness is gone.

Now add garam masala and crushed kasoori methi leaves. Mix well and add roasted Brinjals and boiled potatoes.

Cook on low heat for 2-3 minutes. Now the Bhartha is ready. Garnish with chopped coriander, green chillies and serve with roti/and rice as as a main/side recipe.
