Ingredients

  1. Cooked chicken (2 cups shredded)
  2. Chunky Red Salsa (3/4 cup)
  3. Diced Green Chilies (4oz can)
  4. 4Flour Tortillas
  5. Red Enchilada Sauce
  6. Sour Cream
  7. Cilantro
  8. Shredded Cheddar Cheese

Cooking Instructions

    Heat oven to 400°

  2. 2

    In a bowl, combine chicken, salsa, and chilies - mix well

  3. 3

    Microwave or heat the tortillas to make them pliable

  4. 4

    Add chicken mixture onto each Tortilla - roll up restaurant style

  5. 5

    Bake for 20 minutes - until golden brown

  6. 6

    Warm enchilada sauce

  7. 7

    Spoon enchilada sauce on plate, placing the chimichito on top. Add some sour cream, and sprinkle with cheese and cilantro
