Ingredients

25 to 30 minute
  • 2 kgHalwa Carrot
  • 1and 1/2 cup sugar
  • 1/2 cupfresh cream
  • 1 cupmilk
  • 3-4 tbspGhee
  • As Required Cashewnuts and cardamon(elaichi) powder

Steps

  1. 1

    Wash and peel the skin of the carrot. I have used a long red Delhi or Halwa Carrot.
    Grate the carrot. Here I used Food Processor. You can roughly chop the carrots and transfer them to a mixer jar. Then use pulse mode so that carrots get chopped very finely. I have shown both methods in the pic.

    I am making halwa in a smart cooker. Place the cooker pot on a gas stove. Add 2 tbsp ghee. After the ghee melts, add the chopped fine carrot. Saute it for 2 to 3 minutes. Then add grated carrot and mix well. Add 1/2 cup fresh cream. I have used homemade cream. That is to collect the malai from the milk. Mix it and stir with a spatula.

    Add milk and stir it. Now close the lid of the cooker and cook till 2 whistles on medium flame.With this process, the milk will get absorbed quickly.

    After pressure is released from the cooker, open it. You can see little milk in the pot. On the flame and stir the carrot so that the remaining milk gets absorbed. Add 1 and 1/2 cup sugar and keep stirring continuously. I have used a measuring cup. As the sugar melts the carrot becomes soggy and watery. After some time about 5 to 10 min it will get thicker. Stir well till it gets thick.

    Meanwhile, add the remaining ghee to a small pan. After the ghee melts add chopped cashewnuts and fry till it changes colour lightly. Do not over-fry. After the carrot thickens add the required amount of elaichi powder and mix well. Add fried cashewnuts with ghee to the halwa. Mix it.

    Delicious Carrot Halwa is ready to serve.
