Peel and cube the carrots.

Cube the cucumber and beets.

Add in the chicken and guacamole and stir.

Ready to eat or meal prep for the next day. I usually eat this with my go to green smoothie (see other recipe).

I love to cook but hate to do dishes. Ideal recipes taste delicious, are cooked in one pan and in less than 30 minutes. Although the occassional lengthy recipes for a weekend are lovely too.
