Wholesome and warming on this winter’s day and an ideal use of the stock and juices from a roast chicken if you’ve cooked one. Bring the oil to a medium- high heat and gently fry the onions, garlic and celery until softened, stirring only to avoid sticking.

In the meantime, put all the other ingredients except the macaroni into a stockpot or large saucepan, stir well and start heating.

Stir in the softened onions, garlic and celery, cover the pan and bring to a boil, stirring a couple of times. Reduce the heat to a fast simmer, stirring occasionally but thoroughly. After 25 minutes stir in the macaroni, increase the heat and cook for a further 5-6 minutes, stirring occasionally.

Taste and add further seasoning if wished. Serve piping hot with your choice of bread.
