Assemble ingredients.

Steam all veggies except capsicum cubes and steam 60 % (semi soft)
Keep aside. - 3
Assemble ingredients for white sauce.

In moderately heated pan add butter and allow to melt, add garlic and sauté for few seconds, add maida and roast till it turns aromatic.

Add milk + salt + pepper powder + chilli flakes + oregano and stir well, wait for a boil and then add grated cheese and stir well.
Cook for 3-4 minutes under low to medium flame. - 6
Gradually mixture starts thickening and keep aside, white sauce is done.

In moderately heated pan add oil + butter, add diced Capsicum and sauté for 2 minutes, add all steamed veggies + salt + green chilli and sauté for 5-6 minutes.

Sauté the vegetables very gently. Add chopped Coriander.

Add white sauce and mix gently.
Cook for 4-5 minutes under low to medium flame. Additional milk can be added as per preferred gravy / sauce. - 10
Dish is done.

Serve with Paratha / Naan / or any other Flat Bread.

This lip smacking dish can be paired with vegetable Pulao or vegetable fried rice also.
