Stuffed bathua paratha

Clean bathua by plucking it's leaves by separating the stems. Discard the stems. Wash the bathua leaves as it may carry some dirt. Wash it twice under the running water. Put this in colander so that the water dips away from leaves. Now heat water in a wide pan put the clean bathua leaves in boiling water. Let it simmer for around 10 minutes. Then turn off the flame. Drain the water and keep aside to cool. Once it is turn cold grind it in mixer jar to make a paste.

In a bowl add atta, salt, water to make a dough. Give it a rest for 10 min. For the stuffing mix boilied potato, boiled bathua, chilli powder, coriander powder, salt.Divide the dough into equal balls of the size. Gently roll and spread it and put stuffing in the dough and close it.

Roll it again and dip in dry flour a droll it our flat. Heat a pan apply ghee and cook on both sides. Remove and serve hot with curd, pickles and butter.... Enjoy!!!!!!
