Ingredients

1 hour 30 mins (prepping 1 to 2hours)
4 to 6 Servings
  • 1 lbpork belly (cut 1 to 2 inc square or as desired) rub with salt and wash. Soak in vinegar and salt 30mins to an hour) rinse and let it drip in a colander)
  • 3 clovesgarlic (peel and crushed?
  • 1/4 cupsweet onion
  • 1 cupgreen and red Capsicum
  • 1 tbspKnorr seasoning
  • 1/4 tspSalt
  • 1/4 cuplemon juice
  • 1 cuppotatoes
  • 1 cupcarrots
  • 1/4 tsppaprika
  • 1/4 tspcracked pepper
  • 1/2 cupgreen peas (optional)
  • 1/2 tbspannato powder
  • 1-2 PCsbay leaf/leaves
  • 1 piecetomato
  • 2 tbsptomato paste
  • 3 cupschicken stock or plain water
  • 2 tbspoil

Steps

1 hour 30 mins (prepping 1 to 2hours)

    Mix salt, pepper, lemon, knorr seasoning (or your regular soy sauce), bay leaf, paprika. Add pork (cut 1 to 2 inch square). Marinate for 30mins to an hour. Set aside.

    Heat oil and lightly brown potatoes and carrots. Set aside.

    Using the same oil. Sauté garlic, onion, add annato powder. when onion is clear, add tomatoes until we’ll cooked, add tomato paste. Then add marinated meat )sauté well).

    Make sure to sauté well before adding chicken stock or water. Cover lid and simmer minimum 45minutes or until
    Meat is tender.

  5. 5

    Add potatoes, carrots and green peas. Simmer for 5-8mins. Add the capsicum/bellpepper.

  6. 6

    Taste and serve warm with rice. Enjoy!
