Winter is the phase when we are blessed with a nutritious green leafy vegetable and its none other than SPINACH , it’s beautifully green coloured and has high content of Iron.

Steps

Finely chop spinach leaves.

Add salt to it and mix well, keep it rest for 10 minutes, spinach leaves water. Don’t throw the green water released from spinach.
Squeeze excess water and keep aside. - 3
Take wheat flour, add squeezed spinach + salt + carom seeds + ginger paste + 2 tbsp oil and mix nicely, add the green water as required and knead a semi soft dough.

Pinch medium size balls from dough and roll out round shape giving shape of paratha.
Heat a tawa, place the paratha and drizzle oil all around and toast till golden brown.

Flip and toast the other side till golden brown.

Palak Paratha is ready to serve.
Served with Tomato Coconut Chutney and green Chutney or pickle.
