Holi means a vibrant, lively and exciting festival of colours! The day before Holi colour play is called Holika Dahan . On this day, Holika or fire pile of wood , sticks, bamboos is erected and decorated with colourful flowers, buntings. Then it is lightened in the evening. The fire is worshipped and offering of sweets and savouries are made which are a speciality of each part of India . In Maharashtra, the special dish made for Holi is Puran Poli. It's a sweet bread, made with stuffing a cooked filling of Bengal gram lentils and jaggery. This is called Puran which is stuffed in dough balls and rolled thin and made into Poli or round paratha like roti. Then it's skillet roasted and served with hot ghee and kadhi. Heaven on earth😋😋

First, wash and soak the daal for 1 hour in 2 cups fresh water. Then change water, add 1 tsp turmeric powder, 1 tsp oil and pressure cook for 5 whistles. Cool and remove from the cooker.

Now remove excess water, mash it with a potato masher and then add the jaggery. Place in a borosil microwave safe bowl and cook in microwave at 70 % power for 15 mins. Stir after every 3 minutes with a long handled spoon.

Then keep it covered for 10 minutes. The stuffing will absorb water and become like a dough. Add cardamom powder and nutmeg powder. Mix well. Stuffing or Puran is ready.

Mix the dough for outer cover with mentioned ingredients. It should be soft and non sticky. Keep covered for 10 minutes.

Now make equal lemon sized balls from the stuffing and dough. Also keep tawa for heating on medium heat.
Take the dough ball, flatten on platform with a rolling pin. To dust the surface, use rice flour to make it easy. - 6
Then fill the dough with stuffing and seal the edges tight. Remove excess dough on top. Press well. Gently roll into a round and Thick disk.

Place on hot tawa and roast on both side till golden. Then apply ghee on both sides and again roast till golden. Make all the puran polis similarly.

Serve hot with ghee and kadhi and enjoy!
